1977 70hp after market water pump

The new pump PN 0438579, has ~6" in long 0.050" dia rubber o ring that fits in housing. The schamatics are all different some show the cork gasket under the metal plate and some show on top where does it go? There is also a lot of spray comming out around the lower unit seam. However there is a healthy stream exiting the small square hole in back of motor is this where the water exit is. Also how do I know Im getting enough cooling to my moter?

Well the stream out the small hole is an indicator to let you know that the water pump is working. Water also exits the lower unit. The water pump repair kit you have is correct for your model.
